Ingredients

  • YAM MIXTURE:
  • 3-4 large yams (3 cups cooked)
  • 1/4-1/2 cup sugar (1/2 cup recommended)
  • 1/2 tsp salt
  • 2 eggs
  • 1/3 stick butter
  • 1 cup milk
  • 1 tsp vanilla
  • PECAN TOPPING:
  • 1/2 cup light brown sugar
  • 1/3 cup flour
  • 1 cup pecans
  • 1/3 stick butter

Method

  • Preheat oven to 350 degrees
  • Cut off ends of yams, bake for 50 minutes - cover in foil for less mess
  • Should yield 3 cups of cooked yams
  • Preheat oven to 400 degrees
  • Beat together yam mixture ingredients
  • Bake in 9x9 pan 25 minutes until firm
  • Combine topping ingredients
  • Sprinkle on top of cooked yam mixture
  • Bake for 10 minutes at 400 degrees
