Ingredients
- 3 egg whites, beaten until light and foamy
- 1 c. sugar
- 1 tsp. baking powder
- 1 c. Ritz crackers crumbs
- 1 c. chopped pecans
- butter
- 1/2 pt. whipping cream, whipped and sweetened to taste
Method
- Beat first three ingredients until stiff; fold in cracker crumbs and pecans.
- Grease a 9-inch pie pan with butter and pour in mixture.
- Bake 30 minutes in 350° oven.
- When cool, top with sweetened whipped cream.
- Refrigerate at least 1 hour before serving.
