Ingredients

  • 1 package rice noodles thick style, resembling spaghetti noodles
  • 1/2 cup almond butter more or less to taste to cover noodles
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon wheat free Tamari sauce
  • 1/2 cup corn roasted
  • 1/2 cup roasted peanuts

Method

  • Cook rice noodles according to package directions.
  • In the meantime stir together Almond butter, Sriracha sauce, and Tamari to create a paste, heat in pan over low heat just to melt slightly.
  • Pour over drained noodles and toss to coat.
  • Add corn, and toss.
  • Serve topped with peanuts and chilie flakes.
