- 2 1/2 lb fresh ground chuck roast I ask Butcher to grind meat for me
- 1 tbsp olive oil
- 1 diced onion
- 1/2 diced bell pepper
- 1 diced fresh jalapeno
- 6 medium minced garlic
- 2 tbsp cumin
- 2 tbsp tomato chicken bullion knorr brand
- 6 tbsp chili powder
- 2 tbsp Paprika
- 1 tbsp Season salt I use johnnys or larrys
- 2 bay leaves
- 1 tsp nutmeg
- 2 can 28 oz each diced tomatoes
- 2 cup chicken broth or water
- 2 lb pinto beans cooked
Method
- brown meat and vegies in olive oil till soft add dry spices toss then the tomatoes and beans mix add broth and cook about 1 hour till all ingredients come together.
- The longer the better.
