- 1 lb. fresh shrimp, peeled and deveined
- 1/4 c. butter or oleo
- 1/2 c. chopped onion
- 1/3 c. chopped green pepper
- 1 (28 oz.) can whole tomatoes, chopped
- 1 c. water
- 1/4 tsp. garlic salt
- 1/4 tsp. dried whole rosemary, crushed
- 1/4 tsp. paprika
- 1/4 tsp. pepper
- 1 (6 oz.) pkg. long grain and wild rice mix
Method
- Melt butter or oleo in a large saucepan.
- Add onion and green pepper; saute until tender.
- Stir in next 7 ingredients.
- Bring to boil, cover, reduce heat and simmer 20 to 25 minutes.
- Stir in shrimp.
- Cover and simmer 10 minutes, adding water if necessary. Yields 6 to 8 servings.
