Ingredients

  • 1 cup all purpose flour
  • 1 tbsp granulated sugar
  • 1 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1 cup sour cream or half n half
  • 1/2 cup milk
  • 1 cup whole fresh bluberries
  • 1 vegetable oil

Method

  • combine flour, sugar,baking powder,baking soda and salt into a large mixing bowl.
  • set aside.
  • in a seperate smaller bowl beat eggs, sour cream and milk together.
  • add this mix to your flour mixture and beat until smooth.
  • heat frying pan or griddle pan over medium heat.
  • lightly coat with oil.
  • pour 1/2 cup of batter onto griddle pan and spread batter to make about a 5 inch circle.
  • sprinkle some bluberries on top.
  • when pancake begins to bubble and edges lose their wet and shiny appearance (about 1 minute) flip pancake.
  • cook second side until cooked through.
  • (about 1 minute).
  • continue until all batter and blueberries r used.
  • serve warm with butter and syrup or whipped cream.
