Ingredients

  • 3 c. whole wheat flour
  • 1/4 c. toasted wheat germ
  • 2 tsp. baking powder
  • 1 1/4 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 c. buttermilk
  • 1/2 c. honey
  • 1/4 c. oil
  • 1 c. raisins
  • 1/2 c. chopped walnuts

Method

  • In large bowl, stir together the flour, wheat germ, baking powder, baking soda, and salt.
  • In a separate bowl, combine the buttermilk, honey, and oil; pour all at once into the flour mixture, stirring just until all the ingredients are combined. Add raisins and nuts, being careful not to overmix the batter. Pour batter into greased 5 1/2x9 1/2- inch loaf pan.
  • Bake at 325° about 1 1/4 hours or until a pick inserted in center comes out clean.
  • The top should be slightly pebbled and evenly browned. Let cool in pan 10 minutes, then turn out on rack.
  • Cool thoroughly. Makes 1 loaf.
