Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 medium yellow bell peppers, diced
  • 2 lbs lean ground turkey (white meat)
  • 4 tablespoons chili powder
  • 1 tablespoon cayenne pepper
  • 2 tablespoons ground cumin
  • 12 teaspoon salt
  • 12 teaspoon sugar
  • 1 teaspoon balsamic vinegar
  • 2 (28 ounce) cans diced tomatoes (undrained)
  • 1 (4 ounce) can green chilies
  • 2 (16 ounce) cans navy beans, drained

Method

  • Add onion, garlic,and bell peppers.
  • Cook 3-4 minutes, stirring occasionally.
  • Add turkey and cook another 5 minutes, stirring to brown the meat.
  • Mix in chili powder, cumin, salt, sugar and vinegar.
  • Add diced tomatoes, salsa, chilies and beans.
  • Bring to a boil.
  • Reduce heat and simmer uncovered, stirring occasionally.
  • Or turn off heat and let sit until serving time when it can be re-heated.
  • Serve with toppings of grated cheddar cheese, sour cream.
