Ingredients
- 1 1/2 c. sugar
- 1/2 lb. butter
- 6 eggs
- 2 1/2 c. plain flour
- 2/3 tsp. baking powder
- 1 Tbsp. vanilla
- 1 lb. candied cherries
- 1 lb. candied pineapple
- 1 c. coconut, grated or frozen equivalent
- 1 qt. nuts
Method
- Reserve 1/2 cup flour to put on fruit, coconut and nuts. Cream butter and sugar.
- Add eggs, one at a time, beating thoroughly.
- Sift flour and baking powder together; add to mixture.
- Combine floured fruit and nuts with batter and pour into large tube pan that has been well-greased (I always line bottom with wax paper).
- Bake at 300° for about 2 hours.
