Ingredients

  • 1 1/2 c. sugar
  • 1/2 lb. butter
  • 6 eggs
  • 2 1/2 c. plain flour
  • 2/3 tsp. baking powder
  • 1 Tbsp. vanilla
  • 1 lb. candied cherries
  • 1 lb. candied pineapple
  • 1 c. coconut, grated or frozen equivalent
  • 1 qt. nuts

Method

  • Reserve 1/2 cup flour to put on fruit, coconut and nuts. Cream butter and sugar.
  • Add eggs, one at a time, beating thoroughly.
  • Sift flour and baking powder together; add to mixture.
  • Combine floured fruit and nuts with batter and pour into large tube pan that has been well-greased (I always line bottom with wax paper).
  • Bake at 300° for about 2 hours.
