Ingredients

  • 4 tablespoons sugar
  • 2 13/16 tablespoons butter softened
  • 1 egg
  • 6 3/4 tablespoons milk
  • 1 lemon zested and juiced
  • 1 1/4 cups flour
  • 1 pinch salt
  • 9/16 tablespoon baking powder
  • 1 teaspoon powdered ginger optional
  • 9/16 cup white chocolate finely chunked

Method

  • Preheat the oven to 160 degrees Celsius.
  • Line a muffin tin or grease and flour each individual mold.
  • Beat together the sugar and butter until creamy and lighter in color.
  • Add the egg, milk, and lemon zest. Stir until combined.
  • Sift together the flour, salt, baking powder, and ginger (optional). Stir into the first mixture until the dry ingredients are just absorbed.
  • Add the lemon juice, stir, and then add the white chocolate.
  • Pour the batter into the muffin tin and bake 20 minutes.
