Ingredients
- 4 tablespoons sugar
- 2 13/16 tablespoons butter softened
- 1 egg
- 6 3/4 tablespoons milk
- 1 lemon zested and juiced
- 1 1/4 cups flour
- 1 pinch salt
- 9/16 tablespoon baking powder
- 1 teaspoon powdered ginger optional
- 9/16 cup white chocolate finely chunked
Method
- Preheat the oven to 160 degrees Celsius.
- Line a muffin tin or grease and flour each individual mold.
- Beat together the sugar and butter until creamy and lighter in color.
- Add the egg, milk, and lemon zest. Stir until combined.
- Sift together the flour, salt, baking powder, and ginger (optional). Stir into the first mixture until the dry ingredients are just absorbed.
- Add the lemon juice, stir, and then add the white chocolate.
- Pour the batter into the muffin tin and bake 20 minutes.
