Ingredients

  • chicken breasts (1 per person; I usually have 6 to 8 per pot)
  • Northern beans (raw, 1 lb.)
  • 1 onion (large), grated
  • 1 1/2 tsp. cumin
  • 1 1/2 tsp. garlic powder
  • 1 Tbsp. ground oregano
  • salt and pepper to taste
  • 2 cans chopped green chilies (mild)

Method

  • In large pot, boil chicken (in water); remove from broth. Debone chicken and return to broth.
  • Add beans that have been soaked overnight.
  • Add onion and spices.
  • Cook 1 to 2 hours.
  • Add chilies last half hour.
  • Good served with sour cream and grated cheese.
  • Also very good served with corn bread.
