Ingredients
- chicken breasts (1 per person; I usually have 6 to 8 per pot)
- Northern beans (raw, 1 lb.)
- 1 onion (large), grated
- 1 1/2 tsp. cumin
- 1 1/2 tsp. garlic powder
- 1 Tbsp. ground oregano
- salt and pepper to taste
- 2 cans chopped green chilies (mild)
Method
- In large pot, boil chicken (in water); remove from broth. Debone chicken and return to broth.
- Add beans that have been soaked overnight.
- Add onion and spices.
- Cook 1 to 2 hours.
- Add chilies last half hour.
- Good served with sour cream and grated cheese.
- Also very good served with corn bread.
