Ingredients

  • 2 chicken breasts, boiled and shredded (turkey works fine too)
  • 1/2 cup chicken broth (I use the water were I boil the chicken breasts, and add a chicken bullion)
  • 1/2 cup cream cheese or sour cream (for a healthier version I use light cream cheese)
  • 1 can black beans, rinsed
  • 1 can northern beans, rinsed
  • 1 can white beans, rinsed
  • 1 can corn, rinsed
  • 1 clove garlic, crushed
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1 1/2 tsp cumin
  • 1 tbsp chili powder
  • 1 Cheddar cheese and tortilla chips

Method

  • Boil and shred the chicken/turkey breasts.
  • Mix all the ingredients and cook, medium heat for 15 - 20 minutes (I add the cream cheese/sour cream at the very end).
  • Add more water if needed or if you want a thinner broth.
  • Top with cheese and tortilla chips.
