- 2 chicken breasts, boiled and shredded (turkey works fine too)
- 1/2 cup chicken broth (I use the water were I boil the chicken breasts, and add a chicken bullion)
- 1/2 cup cream cheese or sour cream (for a healthier version I use light cream cheese)
- 1 can black beans, rinsed
- 1 can northern beans, rinsed
- 1 can white beans, rinsed
- 1 can corn, rinsed
- 1 clove garlic, crushed
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1 1/2 tsp cumin
- 1 tbsp chili powder
- 1 Cheddar cheese and tortilla chips
Method
- Boil and shred the chicken/turkey breasts.
- Mix all the ingredients and cook, medium heat for 15 - 20 minutes (I add the cream cheese/sour cream at the very end).
- Add more water if needed or if you want a thinner broth.
- Top with cheese and tortilla chips.
