Ingredients

  • 1-1/2 cup Water
  • 1 cup Wheat Berries
  • 12 whole Cherry Tomatoes, Halved Or Quartered
  • 1/4 cups Scallions, Chopped
  • 2 Tablespoons Parsley, Chopped
  • 1/4 cups Low-fat Feta Cheese, Crumbled
  • FOR THE DRESSING:
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Lemon Juice
  • 1/4 teaspoons Mustard
  • Salt And Pepper, to taste

Method

  • Bring the water to a boil in a pot. Add the wheat berries, cover and lower the heat. Cook on low flame for approximately 1 hour or until the wheat berries are tender and the water has been absorbed. Let cool and add the tomatoes and fresh herbs. Whisk together the dressing ingredients and add to the wheat berries. Toss in the crumbled cheese and serve at room temperature.
