Ingredients
- 1 watermelon
- 1 Tbsp. lime
Method
- Carefully remove and reserve rind from melon.
- Cut rind into desired shapes or pieces.
- Soak overnight in 1 gallon of cold water and lime.
- Stir occasionally while soaking.
- After soaking, rinse well.
- Place rinsed rinds in saucepan and cook in enough water to cover rinds, for 20 minutes.
- Drain and soak rinds in an ice bath, changing water and adding ice until cooled.
- Remove rinds from ice bath and put in boiling water for 10 minutes. Drain and cool with running water.
- Now you are ready to make your syrup.
