Ingredients

  • 1 watermelon
  • 1 Tbsp. lime

Method

  • Carefully remove and reserve rind from melon.
  • Cut rind into desired shapes or pieces.
  • Soak overnight in 1 gallon of cold water and lime.
  • Stir occasionally while soaking.
  • After soaking, rinse well.
  • Place rinsed rinds in saucepan and cook in enough water to cover rinds, for 20 minutes.
  • Drain and soak rinds in an ice bath, changing water and adding ice until cooled.
  • Remove rinds from ice bath and put in boiling water for 10 minutes. Drain and cool with running water.
  • Now you are ready to make your syrup.
