Ingredients
- 1 baked pie shell (9-inch)
- 2 1/2 c. strained watermelon juice
- 2 envelopes unflavored gelatin
- 1/4 c. sugar
- 2 Tbsp. honey
- dash of salt
- 1 Tbsp. lemon juice
- 2 egg whites
- 1/3 c. sugar
- 1 c. heavy cream, whipped
Method
- For watermelon juice:
- Cut watermelon into cubes and push through strainer.
- One quarter of large watermelon will yield 2 1/2 cups juice.
