Ingredients

  • 2 tablespoon orange juice
  • 1/2 tablespoon lemon juice
  • 1 each shallots minced
  • 1 tablespoons olive oil
  • 1 x salt and black pepper to taste
  • 6 cups watermelon cut into 2-inch cubes, cold
  • 1/2 cup feta cheese cubed
  • 4 tablespoons mint leaves freshly minced
  • 1 bunch arugula (roquette) prepared, or baby spinach, or mixed greens

Method

  • Add dressing ingredients into a small bowl, whisk until well blended.
  • Keep dressing refrigerated until ready to use.
  • Add watermelon, feta cheese, and mint into a large bowl, and mix well.
  • Pour dressing over salad.
  • Gently toss until evenly coated and well combined.
  • Divide greens among individual serving plates.
  • Top each plate with equal amount of watermelon salad.
  • Serve.
