Ingredients
- 2 tablespoon orange juice
- 1/2 tablespoon lemon juice
- 1 each shallots minced
- 1 tablespoons olive oil
- 1 x salt and black pepper to taste
- 6 cups watermelon cut into 2-inch cubes, cold
- 1/2 cup feta cheese cubed
- 4 tablespoons mint leaves freshly minced
- 1 bunch arugula (roquette) prepared, or baby spinach, or mixed greens
Method
- Add dressing ingredients into a small bowl, whisk until well blended.
- Keep dressing refrigerated until ready to use.
- Add watermelon, feta cheese, and mint into a large bowl, and mix well.
- Pour dressing over salad.
- Gently toss until evenly coated and well combined.
- Divide greens among individual serving plates.
- Top each plate with equal amount of watermelon salad.
- Serve.
