Ingredients

  • 6 medium red ripe tomatoes
  • 24 slivers garlic
  • Salt to taste if desired
  • Freshly ground pepper to taste
  • 3 tablespoons olive oil
  • 4 tablespoons grated Parmesan cheese
  • 4 tablespoons chopped fresh basil

Method

  • Preheat the broiler to high, 500 degrees.
  • Cut the tomatoes in half and arrange, cut side up, in a baking dish.
  • Insert 2 garlic slivers in each half.
  • Sprinkle with salt, pepper and olive oil.
  • Sprinkle with the cheese.
  • Place under the broiler for about 5 minutes until bubbling and the garlic tips start to brown.
  • Remove garlic, sprinkle with basil and serve.
