Ingredients

  • 1/2 cup golden syrup
  • 1/2 cup sugar
  • 3/4 cup whole milk
  • 2/3 cup golden raisins
  • 1 None lemon, peel finely grated
  • 1 None egg, lightly beaten
  • 1 1/2 cups flour
  • 1 pinch salt
  • 1 tbsp baking powder
  • 2/3 cup chopped walnuts

Method

  • Preheat the oven to 325°F. Line a 9 x 5-inch loaf pan with a double thickness of parchment paper.
  • Place the golden syrup, sugar, milk and raisins in a small saucepan on medium heat. Stir gently until the sugar has dissolved. Cool. Mix in the lemon peel and egg.
  • Sift the flour, salt and baking powder into a large bowl. Stir in the walnuts. Gradually stir in the raisin mixture. Pour into the prepared pan.
  • Bake for about 1 hour, until golden brown and toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
  • Serve sliced with butter. Keep any unsliced loaf wrapped in parchment paper in an airtight container.
