- 1/2 c. butter
- 2 c. sugar
- 1 c. buttermilk
- 2 c. flour
- 1 1/2 c. black walnuts, chopped
- 1/2 tsp. cream of tartar
- 1/2 c. shortening
- 5 eggs, separated
- 1 tsp. baking soda
- 1 tsp. vanilla
- 1 c. flaked coconut
Method
- Cream butter, shortening and sugar until light and fluffy. Add egg yolks; beat well.
- Combine buttermilk and baking soda; stir until baking soda is dissolved.
- Add flour to creamed mixture, alternating with buttermilk and beginning and ending with flour.
- Add vanilla, black walnuts and coconut.
- Add cream of tartar to egg whites; beat until stiff.
- Fold into batter.
- Pour batter into 3 greased and floured 9-inch pans.
- Bake at 350° for 30 minutes.
