Ingredients

  • 1/2 c. butter
  • 2 c. sugar
  • 1 c. buttermilk
  • 2 c. flour
  • 1 1/2 c. black walnuts, chopped
  • 1/2 tsp. cream of tartar
  • 1/2 c. shortening
  • 5 eggs, separated
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 1 c. flaked coconut

Method

  • Cream butter, shortening and sugar until light and fluffy. Add egg yolks; beat well.
  • Combine buttermilk and baking soda; stir until baking soda is dissolved.
  • Add flour to creamed mixture, alternating with buttermilk and beginning and ending with flour.
  • Add vanilla, black walnuts and coconut.
  • Add cream of tartar to egg whites; beat until stiff.
  • Fold into batter.
  • Pour batter into 3 greased and floured 9-inch pans.
  • Bake at 350° for 30 minutes.
