Ingredients

  • 1 small can mandarin oranges, drained and chopped
  • 1 red delicious apple, unpeeled, chopped
  • 1 ripe pear, unpeeled, chopped
  • 2 c. cooked long grain, brown and wild rice blend
  • 1/2 c. chopped celery
  • 1/3 c. craisins
  • 1/4 c. sour cream
  • 1/2 c. mayonnaise
  • 1/2 c. chopped walnuts, toasted
  • red leaf lettuce leaves, optional

Method

  • Combine oranges, apple, pear, rice, celery and craisins in a large bowl.
  • Combine mayonnaise and sour cream; add to rice mixture. Cover and chill.
  • spoon salad mixture onto individual plates or into lettuce lined bowl.
  • Sprinkle with walnuts just before serving.
  • Yields 8 servings.
