Ingredients

  • 6 oz. Lindt or Tobler bittersweet chocolate
  • 6 oz. milk chocolate
  • 5 eggs, separated
  • 1/2 c. sugar
  • 3/4 c. sweet butter
  • 2 Tbsp. flour

Method

  • Melt chocolate on double boiler.
  • Add sugar and butter. Remove from heat and add egg yolks.
  • Beat egg whites until stiff peaks.
  • Add flour to egg whites and beat until stiff.
  • Combine 1/3 egg white mixture with chocolate mixture. Mix well.
  • Fold in remaining egg white.
  • Pour into 8-inch spring-form, well buttered pan.
  • Bake at 350° for 35 to 45 minutes.
  • Serve with unsweetened cream.
