Ingredients
- 2 tablespoons oil
- 2 onions, very finely sliced
- 5 garlic cloves, finely chopped
- 2 lemongrass stems, white part only, very finely sliced
- 3 red chillies, seeded and finely sliced
- 250 g (9 oz) snake beans, topped and tailed and cut into short piecesÂ
- 300 g (10 1/2 oz) raw prawns (shrimp), peeled and deveined
- 2 teaspoons sugar
- 1 tablespoon fish sauce
- 1 tablespoon rice wine vinegar
- garlic chives, to garnish
Method
1. Heat the oil in a large wok. Add the onion, garlic, lemongrass and chilli and stir-fry over medium-high heat for 4 minutes, or until soft and golden.
2. Add the beans to the wok and stir-fry for 2-3 minutes, or until bright green. Add the prawns and sugar and toss gently for 3 minutes.
3. Add the fish sauce and rice wine vinegar, toss well and serve, sprinkled with garlic chives.
