Ingredients

  • 1 cup butter
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • 4 None eggs
  • 2 1/4 cups self-rising flour, sifted
  • 1/4 cup milk
  • 2 tbsp strawberry jam
  • None None powdered sugar, for dusting

Method

  • Preheat oven to 350°F. Grease 2 deep 8 inch cake pans and line bases with baking paper.
  • In a stand mixer, beat butter, vanilla and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add flour and milk, in 2 batches. Transfer to prepared pans and bake for 30 mins. Transfer cakes to a wire rack to cool.
  • Join cooled cakes together using jam. Dust with powdered sugar before serving.
