Ingredients
- 1 cup butter
- 1 tsp vanilla extract
- 1 cup granulated sugar
- 4 None eggs
- 2 1/4 cups self-rising flour, sifted
- 1/4 cup milk
- 2 tbsp strawberry jam
- None None powdered sugar, for dusting
Method
- Preheat oven to 350°F. Grease 2 deep 8 inch cake pans and line bases with baking paper.
- In a stand mixer, beat butter, vanilla and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add flour and milk, in 2 batches. Transfer to prepared pans and bake for 30 mins. Transfer cakes to a wire rack to cool.
- Join cooled cakes together using jam. Dust with powdered sugar before serving.
