Ingredients
- 1 (1 lb.) pkg. dried baby lima beans
- 5 c. water
- 1 large onion, studded with 8 whole cloves
- 1/2 c. maple syrup
- 1/2 c. ketchup
- 2 tsp. salt
- 1 bay leaf
- 1/2 lb. salt pork, thinly sliced
- 1 tsp. Tabasco pepper sauce
Method
- Rinse lima beans; turn into large saucepan.
- Add water; cover and soak for several hours or overnight.
- When ready to cook, add onion.
- Bring to boil and boil 5 minutes, uncovered.
- Turn into a 3-quart casserole dish without draining.
- Add remaining ingredients and cover.
- Bake in a 350° oven for 3 hours until beans are tender.
- Makes 8 servings.
