Ingredients

  • 1 (1 lb.) pkg. dried baby lima beans
  • 5 c. water
  • 1 large onion, studded with 8 whole cloves
  • 1/2 c. maple syrup
  • 1/2 c. ketchup
  • 2 tsp. salt
  • 1 bay leaf
  • 1/2 lb. salt pork, thinly sliced
  • 1 tsp. Tabasco pepper sauce

Method

  • Rinse lima beans; turn into large saucepan.
  • Add water; cover and soak for several hours or overnight.
  • When ready to cook, add onion.
  • Bring to boil and boil 5 minutes, uncovered.
  • Turn into a 3-quart casserole dish without draining.
  • Add remaining ingredients and cover.
  • Bake in a 350° oven for 3 hours until beans are tender.
  • Makes 8 servings.
