Ingredients

  • 6 large potatoes
  • 1/2 stick margarine
  • 2 eggs, boiled
  • 1/2 c. chopped onion
  • 1/2 c. chopped pickles (Vera uses sweet)
  • 2 Tbsp. diced pimentos
  • 2 Tbsp. green chilies
  • 1/2 c. mayonnaise
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. vinegar

Method

  • Boil potatoes until tender. Peel and mash or chunk in large bowl. Mix margarine with potatoes while they are hot.
  • Mix onion, pickles, vinegar, pimientos, chilies and mayonnaise with potatoes. Add salt and pepper.
  • Mix well.
  • Cut boiled eggs in fourth and place on top of salad.
