Ingredients
- 6 oz. vermicelli, broken up
- 1 medium sweet red pepper, cut in strips
- 1 medium sweet green pepper, cut in strips
- 1 (8 oz.) jar cheese spread with jalapeno peppers
- 1 (16 oz.) can golden hominy, drained
- 1 (8 oz.) can red kidney beans, drained
- 1 (8 oz.) carton sour cream
Method
- Stir-fry red and green peppers until crisp-tender.
- Stir in cheese until melted.
- Add hominy and beans.
- Cook until heated through.
- Stir in sour cream.
- Cook about 5 minutes.
- In large kettle, cook pasta 5 to 7 minutes until tender.
- Drain and transfer to a large platter.
- Top with cheese mixture.
- Toss and serve at once.
- Yields 4 main dish servings.
