Ingredients

  • 6 oz. vermicelli, broken up
  • 1 medium sweet red pepper, cut in strips
  • 1 medium sweet green pepper, cut in strips
  • 1 (8 oz.) jar cheese spread with jalapeno peppers
  • 1 (16 oz.) can golden hominy, drained
  • 1 (8 oz.) can red kidney beans, drained
  • 1 (8 oz.) carton sour cream

Method

  • Stir-fry red and green peppers until crisp-tender.
  • Stir in cheese until melted.
  • Add hominy and beans.
  • Cook until heated through.
  • Stir in sour cream.
  • Cook about 5 minutes.
  • In large kettle, cook pasta 5 to 7 minutes until tender.
  • Drain and transfer to a large platter.
  • Top with cheese mixture.
  • Toss and serve at once.
  • Yields 4 main dish servings.
