Ingredients

  • 10 to 12 potatoes, boiled and mashed with milk and butter
  • 3/4 lb. grated Cheddar cheese
  • 2 1/2 sticks margarine, melted (will be cooking onions in it)
  • 2 chopped onions
  • 1/2 lb. lasagna noodles, cooked and drained
  • salt (optional)

Method

  • Cook potatoes and mash, adding milk and butter as needed. Cook and drain lasagna noodles.
  • Add cheese to potatoes and beat with mixer. Saute onions in butter until tender. Add 1/3 of the butter and onion mixture to potatoes.
  • Add salt to taste.
  • Butter a 9 x 13-inch pan.
  • Layer with 1/2 of the noodles, then 1/2 of the potatoes.
  • Repeat, ending with noodles.
  • Pour the remaining butter and onions over top of noodles.
  • Cover with foil and bake at 350° for 45 minutes.
