Ingredients

  • 3 whole Potatoes
  • 16 ounces, weight Approximately Of Spinach Dip
  • 2 cups Cheese (we Used Some Cheddar And Mozzarella)
  • 1 whole Tomato
  • 1 whole Avocado

Method

  • Bake the whole potatoes for approximately 30 minutes so that they are cooked and you can scoop out the insides and have the skins left.
  • Once you have scooped them to your preference for potato skins, spoon some spinach dip in the shells.
  • You can use your own recipe for spinach dip or buy a container of it from your grocers deli, whatever works!
  • Sprinkle cheese on top of every potato skin.
  • Cook the skins until the cheese is melted and they are warmed through.
  • Top them with diced tomatoes and slices of avocado.
  • Serve with sour cream and enjoy!
