Ingredients

  • 1 lb. ground beef
  • 2 Tbsp. butter
  • 1 tsp. salt
  • 1 chopped onion
  • 1 pkg. frozen mixed vegetables
  • 1 c. chopped celery
  • 1 large can tomatoes, chopped
  • 2 Tbsp. rice
  • 1 bay leaf
  • 1 c. thin noodles
  • 2 c. water

Method

  • Brown meat in butter.
  • Add onion and cook 1 minute.
  • Add 2 cups water, rice and tomatoes.
  • Let simmer 15 minutes.
  • Add vegetables, noodles and enough water, as desired, for soup. Check for seasoning and add 1 bouillon cube, if needed.
  • Simmer about 15 minutes until vegetables are tender.
  • Serve rather thick.
