Ingredients
- 1 lb. ground beef
- 2 Tbsp. butter
- 1 tsp. salt
- 1 chopped onion
- 1 pkg. frozen mixed vegetables
- 1 c. chopped celery
- 1 large can tomatoes, chopped
- 2 Tbsp. rice
- 1 bay leaf
- 1 c. thin noodles
- 2 c. water
Method
- Brown meat in butter.
- Add onion and cook 1 minute.
- Add 2 cups water, rice and tomatoes.
- Let simmer 15 minutes.
- Add vegetables, noodles and enough water, as desired, for soup. Check for seasoning and add 1 bouillon cube, if needed.
- Simmer about 15 minutes until vegetables are tender.
- Serve rather thick.
