Ingredients

  • 2 cucumbers
  • 2 carrots
  • 1 small onion
  • 1/2 bell pepper
  • 1 c. celery
  • 1 tsp. lemon juice
  • 1 tsp. salt
  • 1 c. mayonnaise
  • 1 envelope plain Knox gelatine
  • 1/4 c. cold water

Method

  • Grate and
  • squeeze
  • cucumbers, carrots and onion.
  • Chop bell pepper and celery.
  • Add
  • lemon
  • juice and salt.
  • Mix all together.
  • Add mayonnaise. Mix Knox gelatine with cold water. Dissolve over
  • hot water. Add
  • to vegetables and mayonnaise. Let set in
  • refrigerator at least 12 hours.
  • Great on Ritz and cubes of bread (open face sandwiches).
