Ingredients

  • 1 12 cups white rice
  • 2 tablespoons vegetable oil
  • 13 medium onion, sliced
  • 13 cup coarsely chopped potato
  • 12 cup chopped cauliflower
  • 13 cup sliced carrot
  • 12 teaspoon salt
  • 12 teaspoon ground pepper
  • 12 cup frozen peas
  • 2 teaspoons chopped fresh basil
  • 2 teaspoons chopped fresh parsley

Method

  • In a bowl combine rice and 3 cups of water, set aside.
  • In a large saucepan heat oil over medium heat.
  • Add onion, potato, cauliflower, carrots, salt and pepper.
  • Cook and stir 1 to 2 minutes.
  • Add peas, cook and stir 1 minute.
  • Add rice water mixture.
  • Bring to boiling, reduce heat.
  • Cover and simmer 10 to 15 minutes.
  • Remove from heat, let stand 5 minutes.
  • Top with fresh basil and parsley.
