- 2 (10 ounce) packages frozen mixed vegetables
- 12 cup boiling water
- 14 cup butter or 14 cup margarine
- 14 cup all-purpose flour
- 1 12 cups milk, scalded
- 14-12 cup grated cheddar cheese
- 34 teaspoon salt
- 14 teaspoon black pepper
- 12 cup chopped green onion
- 14 cup sliced pimiento
Method
- In a saucepan, combine frozen veges.
- and boiling water.
- Bring to boil again.
- Cover and simmer for 5 minutes.Drain well.
- Meanwhile, melt the butter in a saucepan.
- Blend in flour.
- Cook for 1 minute.
- Gradually stir in milk.
- Simmer, stirring, until smooth and thickened.
- Add cheese and seasonings.
- Mix in vegetables, onions and pimiento.
- Spread into buttered 1-quart casserole dish.
- Bake at 350 degrees for 30 minutes; or until bubbly.
