Ingredients

  • 2 (10 ounce) packages frozen mixed vegetables
  • 12 cup boiling water
  • 14 cup butter or 14 cup margarine
  • 14 cup all-purpose flour
  • 1 12 cups milk, scalded
  • 14-12 cup grated cheddar cheese
  • 34 teaspoon salt
  • 14 teaspoon black pepper
  • 12 cup chopped green onion
  • 14 cup sliced pimiento

Method

  • In a saucepan, combine frozen veges.
  • and boiling water.
  • Bring to boil again.
  • Cover and simmer for 5 minutes.Drain well.
  • Meanwhile, melt the butter in a saucepan.
  • Blend in flour.
  • Cook for 1 minute.
  • Gradually stir in milk.
  • Simmer, stirring, until smooth and thickened.
  • Add cheese and seasonings.
  • Mix in vegetables, onions and pimiento.
  • Spread into buttered 1-quart casserole dish.
  • Bake at 350 degrees for 30 minutes; or until bubbly.
