Ingredients

  • 2 (10 oz. each) pkg. frozen mixed vegetables
  • 1/2 c. boiling water
  • 1/4 c. butter or margarine
  • 1/4 c. all-purpose flour
  • 1 1/2 c. milk, scalded
  • 1/4 c. grated Cheddar cheese
  • 3/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 c. chopped green onions
  • 1/4 c. sliced pimento

Method

  • In a saucepan combine frozen vegetables and boiling water. Bring to a boil again.
  • Cover and simmer 5 minutes.
  • Drain well. Meanwhile, melt butter in a sauce pan.
  • Blend in flour; cook for 1 minute.
  • Gradually stir in milk.
  • Simmer, stirring, until smooth and thickened.
  • Add cheese and seasonings.
  • Mix in vegetables, onions and pimento.
  • Spread into buttered 1-quart casserole.
  • Bake at 350° for 30 minutes or until bubbly.
  • Good served with baked ham or pork chops.
