Ingredients

  • 1 (16 ounce) package frozen spinach
  • 14 cup butter, divided
  • salt
  • black pepper
  • 2 cups potatoes, cubed, cooked
  • 1 cup milk
  • 2 cups cooked carrots
  • 2 cups green beans, cooked
  • 12 teaspoon paprika

Method

  • Preheat oven to 375 degrees.
  • Lightly grease 4 quart casserole or roasting pan.
  • Cook spinach according to package directions, drain.
  • Spread spinach in prepared casserole, dot with 1 tablespoon butter and season with salt and pepper.
  • mash potatoes with milk and 1/2 cup butter until creamy.
  • Layer half of potatoes, carroes, carrots and beans over spinach.
  • Dot with another 1 tablespoon butter, season with salt and pepper.
  • Top with remaining potatoes.
  • Dot with remaining 2 tablespoons butter and sprinkle with paprika.
  • Bake 1 hour or until heated through and lightly browned.
