Ingredients

  • 10 potatoes, cook with skin on
  • 3 slices bread, cubed
  • 1 large onion, cut up
  • 1 green pepper, cut up
  • 1 small jar pimento, cut up
  • 1/2 small box Velveeta, shredded
  • 1 c. butter, melted
  • corn flake crumbs
  • milk

Method

  • Dice potatoes; add bread cubes, onion, pepper and pimentos. Toss together and season to taste.
  • Add cheese.
  • Put in large greased baking pan.
  • Pour melted butter (or oleo) over top. Sprinkle corn flake crumbs over top.
  • Pour milk around sides of pan until halfway up.
  • Bake 1 hour at 350°.
  • Serves 12.
