Ingredients

  • 1/4 lb. (1 stick) unsalted butter, softened
  • 3/4 c. packed light brown sugar
  • 1 egg
  • 2 Tbsp. vanilla extract
  • 3/4 c. coarsely chopped dates
  • 1 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 tsp. baking powder
  • 1/2 c. grated coconut
  • 1/2 c. granola
  • 1 c. coarsely chopped walnuts
  • 1 (12 oz.) pkg. semi-sweet chocolate chips

Method

  • In a large bowl of an electric mixer, cream the butter and brown sugar until smooth.
  • Add egg and vanilla and beat well.
  • Stir in the dates and let the mixture stand 5 minutes to soften dates. Then beat at a high speed for 3 minutes or until very light brown and creamy.
