- 2 lb. ground beef or ground turkey
- 2 Tbsp. margarine
- 2 c. diced onion
- 2 cloves garlic, crushed
- 1 1/2 c. chopped carrots
- 2 c. chopped celery
- 1 c. diced green pepper
- 1/2 tsp. celery seed
- 1/4 tsp. black pepper
- 3 c. beef broth
- 1 (16 oz.) can crushed tomatoes
- 1 c. hominy or corn (optional)
Method
- In large pan, brown meat in margarine.
- Add onion, garlic, carrots, celery and green pepper.
- Simmer 10 minutes.
- Add beef broth, tomatoes, salt and black pepper.
- Simmer on low for 35 minutes.
- Add hominy or corn.
- Cook 10 minutes more.
- Yields 4 quarts.
- May be refrigerated several days or frozen.
