Ingredients

  • 2 lb. ground beef or ground turkey
  • 2 Tbsp. margarine
  • 2 c. diced onion
  • 2 cloves garlic, crushed
  • 1 1/2 c. chopped carrots
  • 2 c. chopped celery
  • 1 c. diced green pepper
  • 1/2 tsp. celery seed
  • 1/4 tsp. black pepper
  • 3 c. beef broth
  • 1 (16 oz.) can crushed tomatoes
  • 1 c. hominy or corn (optional)

Method

  • In large pan, brown meat in margarine.
  • Add onion, garlic, carrots, celery and green pepper.
  • Simmer 10 minutes.
  • Add beef broth, tomatoes, salt and black pepper.
  • Simmer on low for 35 minutes.
  • Add hominy or corn.
  • Cook 10 minutes more.
  • Yields 4 quarts.
  • May be refrigerated several days or frozen.
