Ingredients

  • 1 whole English Cucumber
  • 1/2 teaspoons Kosher Salt
  • 1 cup Greek Yogurt
  • 1 clove Garlic, Minced
  • 1 Tablespoon Fresh Dill, Chopped
  • 1 whole Lemon, Juiced

Method

  • Peel the cucumber and slice lengthwise. Scoop the seeds out with a spoon. Grate on a box grater, finely. Place in a strainer and sprinke with salt. Let sit on the counter for 20 minutes. A lot of juice will drain out of the cucmber! Squeeze the remaining juice out of the grated cucumber and place in a bowl. Add the yogurt, garlic, dill and lemon juice. Stir to combine. Add salt to taste if needed. Chill for 2 hours to let flavors meld.
