Ingredients

  • 1 can (15 Oz. Can) Black Beans
  • 1 can (16 Oz. Can) Refried Beans
  • 1/4 cups Water
  • 1 pinch Garlic Salt
  • 1/4 teaspoons Chili Powder
  • 1/4 teaspoons Cumin
  • 1/4 teaspoons Chopped Jalapeno, Or To Taste
  • 4 pieces Tortillas
  • 1/4 cups Cooking Oil, Or More If Needed
  • 2 cups Torn Lettuce
  • 1/2 cups Shredded Cheese
  • 1/4 cups Salsa Of Your Choice
  • Sour Cream To Garnish

Method

  • Start by adding refried beans and water to a sauce pan.
  • Heat to medium/high and stir frequently.
  • Add all seasonings and chopped jalapeno, continue to stir, then turn to low and stir occasionally.
  • Begin to heat a fry pan with the oil.
  • When oil is bubbly, fry tortilla one at a time until crispy.
  • Place black beans in a microwaveable bowl and microwave for 1-2 minutes until hot.
  • When ready to serve, start by placing a crispy tortilla on a plate and spread with desired amount of refried bean mixture.
  • Top with desired amount of black beans, lettuce, salsa, cheese, and sour cream.
  • Makes about 4 servings.
