Ingredients

  • 2 c. chopped bananas
  • 1 c. chopped apple
  • 2 c. plain all-purpose flour
  • 3 beaten eggs
  • 1 1/2 tsp. vanilla
  • 1 tsp. salt
  • 1 tsp. soda
  • 8 oz. can crushed pineapple
  • 2 c. sugar
  • 1 1/4 c. oil
  • 1 c. coconut
  • 1 tsp. cinnamon
  • 2 c. chopped nuts

Method

  • Mix dry ingredients in one bowl.
  • Mix eggs and oil, stirring until dry ingredients are moistened; do not beat.
  • Stir in vanilla, pineapple, 1 cup chopped nuts, bananas and apple.
  • Flour and grease a Bundt pan.
  • Bake at 350° for 1 hour and 10 minutes.
  • (I bake at 325° for 55 minutes.)
  • Let cake cool and spread on frosting. Sprinkle on 1 cup chopped nuts.
  • Makes 8 servings.
