Ingredients
- 2 c. chopped bananas
- 1 c. chopped apple
- 2 c. plain all-purpose flour
- 3 beaten eggs
- 1 1/2 tsp. vanilla
- 1 tsp. salt
- 1 tsp. soda
- 8 oz. can crushed pineapple
- 2 c. sugar
- 1 1/4 c. oil
- 1 c. coconut
- 1 tsp. cinnamon
- 2 c. chopped nuts
Method
- Mix dry ingredients in one bowl.
- Mix eggs and oil, stirring until dry ingredients are moistened; do not beat.
- Stir in vanilla, pineapple, 1 cup chopped nuts, bananas and apple.
- Flour and grease a Bundt pan.
- Bake at 350° for 1 hour and 10 minutes.
- (I bake at 325° for 55 minutes.)
- Let cake cool and spread on frosting. Sprinkle on 1 cup chopped nuts.
- Makes 8 servings.
