Ingredients

  • 1/4 lb. bacon, cut into small pieces
  • 2 cloves garlic
  • 4 c. chopped fresh spinach, wash again
  • 4 c. chicken broth
  • 1 (16 oz.) can small white beans with liquid
  • 1 (28 oz.) can tomatoes with liquid
  • 1 medium yellow bell pepper, cubed
  • 1 (8 oz.) pkg. tri-color tortellini

Method

  • Saute bacon and garlic for 5 to 8 minutes or until bacon is brown.
  • Remove from pan.
  • Cook spinach in pan drippings for 2 minutes or until wilted.
  • Stir in broth, beans, tomatoes and bell pepper and bring to a boil. Stir in pasta and bacon and simmer until pasta is al dente.
