- 1/4 red bell pepper, minced
- 1 cup minced Italian flat-leaf parsley
- 1/4 teaspoon cayenne pepper
- 2 gherkin pickles, minced
- 3 tablespoons capers, rinsed and minced
- 1 cup olive oil
- 1 tablespoon white-wine vinegar
- 1/2 cup mashed potatoes
- Salt and freshly ground black pepper to taste
Method
- Combine the bell pepper, parsley, cayenne, gherkins, capers, olive oil and vinegar in a bowl and stir to combine.
- Add the mashed potatoes and beat to combine.
- Adjust seasoning with salt and pepper to taste and serve with the boiled meat and vegetables.
