Ingredients

  • 1/4 red bell pepper, minced
  • 1 cup minced Italian flat-leaf parsley
  • 1/4 teaspoon cayenne pepper
  • 2 gherkin pickles, minced
  • 3 tablespoons capers, rinsed and minced
  • 1 cup olive oil
  • 1 tablespoon white-wine vinegar
  • 1/2 cup mashed potatoes
  • Salt and freshly ground black pepper to taste

Method

  • Combine the bell pepper, parsley, cayenne, gherkins, capers, olive oil and vinegar in a bowl and stir to combine.
  • Add the mashed potatoes and beat to combine.
  • Adjust seasoning with salt and pepper to taste and serve with the boiled meat and vegetables.
