- 1 lb. lean ground turkey
- 1 c. chopped onion
- 1/2 c. finely chopped carrots
- 6 c. low salt chicken broth
- 1/2 c. uncooked wild rice
- 1/2 tsp. poultry seasoning
- 1/2 tsp. dried thyme
- 1/8 tsp. pepper
- 1/2 c. flour
- 2 c. skim or regular milk
Method
- Crumble ground turkey into 6-quart saucepan or Dutch oven. Stir in onion and carrots.
- Cook over medium heat for 3 to 5 minutes.
- Stir in chicken broth, rice, poultry seasoning, pepper and thyme.
- Bring to boil and reduce heat.
- Cover and simmer 45 to 55 minutes or until tender.
- Place flour in a small bowl. Gradually add milk, blending until smooth.
- Cook and stir over medium heat until soup bubbles and thickens slightly.
