Ingredients

  • 1 lb. lean ground turkey
  • 1 c. chopped onion
  • 1/2 c. finely chopped carrots
  • 6 c. low salt chicken broth
  • 1/2 c. uncooked wild rice
  • 1/2 tsp. poultry seasoning
  • 1/2 tsp. dried thyme
  • 1/8 tsp. pepper
  • 1/2 c. flour
  • 2 c. skim or regular milk

Method

  • Crumble ground turkey into 6-quart saucepan or Dutch oven. Stir in onion and carrots.
  • Cook over medium heat for 3 to 5 minutes.
  • Stir in chicken broth, rice, poultry seasoning, pepper and thyme.
  • Bring to boil and reduce heat.
  • Cover and simmer 45 to 55 minutes or until tender.
  • Place flour in a small bowl. Gradually add milk, blending until smooth.
  • Cook and stir over medium heat until soup bubbles and thickens slightly.
