- 2 tbsp. oil, 1 tbsp. oil
- 1 pkg. UNCLE BEN'S® wild rice and long grain rice minus the seasoning pkg.
- 4 green onions, sliced
- 1/2 pound mushrooms, sliced
- 1/2 pound oven roasted boneless turkey breast
- 1/4 teaspoon salt
- 1/2 pound cooked ham
- 1/2 pound seedless grapes
- 1/4 c. red wine vinegar
- 2 teaspoon prepared mustard
- 1 1/4 teaspoon sugar
- 1/4 teaspoon black pepper
- 1/2 teaspoon thyme
- 1/2 c. toasted slivered almonds
- 2 avocados
Method
- In a 4 qt saucepan over medium high heat in 2 Tbsp.
- oil, cook green onions, mushrooms, and 1/4 tsp.
- salt till tender and lightly browned, stirring frequently.
- Add in water and rice according to directions on UNCLE BEN'S® box (excluding the seasoning).
- Cook till liquid is absorbed.
- Remove from heat.
- Cut grapes in 1/2 and meat in small cubes.
- In a large bowl mix vinegar, mustard, sugar, thyme, pepper, 1 Tbsp.
- oil, 1 tsp.
- salt.
- Add in rice mix, ham and grapes and nuts.
- Toss and coat well.
- Cut avocado into chunks and fold in.
- 8 main dish servings.
