Ingredients

  • 1 c. mild green salsa
  • 1 medium tomato, chopped
  • 4 1/2 oz. sharp Cheddar cheese, shredded
  • 6 oz. cooked turkey or chicken, shredded
  • 1/2 c. drained canned diced mild green chilies
  • 1/2 c. chopped onion
  • 6 (6-inch) corn tortillas
  • 1/2 medium avocado, diced
  • 3/4 c. plain nonfat yogurt
  • 2 tsp. fresh lime juice
  • 1 tsp. grated lime zest
  • 1 c. shredded lettuce
  • thinly sliced radish for garnish (optional)

Method

  • Preheat the oven to 450°.
  • Set aside, in separate bowls, 1/3 cup of salsa, 1/4 cup of chopped tomato and 3 tablespoons of the cheese.
  • In a large bowl, combine the turkey, chilies, onion, the remaining salsa, tomato and cheese; stir until well mixed.
