Ingredients

  • 1 lb ground turkey
  • 1 cup brown rice, prepared according to package directions
  • 1 small onion diced
  • 1 small green bell pepper diced
  • 1/4 cup diced pickled jalepenos
  • 1/2 cup jarred chunky salsa. your favorite
  • 1 pepper and adobo seasoning to taste

Method

  • in a non stick skillet, saute the onion, peppers,and jalepenos until softened.
  • Add ground turkey and cook until no longer pink crumbling it as it cooks.
  • once its browned, add pepper and adobo.
  • i added about 1/2 teaspoon for each.
  • stir in the seasonings well and add the salsa and brown rice.
  • stir until combined and let it cook until the pan looks somewhat dry.
  • remove from heat and serve as a taco, burrito, enchilada, or tostada filling.
  • i have also used this as a filling for lettuce wraps.
  • servewith cheese, sour cream, extra salsa and hot sauce.
