Ingredients

  • 2 cups finely chopped cooked turkey or chicken (about 3/4 lb.)
  • 36 (any variety), finely rolled (about 1-1/3 cups), divided
  • 2/3 cup mayonnaise
  • 1 egg
  • 1/4 cup slivered almonds, chopped
  • 1 Tbsp. finely chopped onion
  • 1/8 tsp. ground black pepper
  • 2 Tbsp. vegetable oil

Method

  • Mix turkey, 1 cup cracker crumbs, mayonnaise, egg, almonds, onion and pepper in large bowl.
  • Shape into 4 patties.
  • Coat with remaining crumbs.
  • Cook croquettes in oil in medium skillet over medium heat until browned on both sides.
  • Serve warm.
