Ingredients
- 2 cups finely chopped cooked turkey or chicken (about 3/4 lb.)
- 36 (any variety), finely rolled (about 1-1/3 cups), divided
- 2/3 cup mayonnaise
- 1 egg
- 1/4 cup slivered almonds, chopped
- 1 Tbsp. finely chopped onion
- 1/8 tsp. ground black pepper
- 2 Tbsp. vegetable oil
Method
- Mix turkey, 1 cup cracker crumbs, mayonnaise, egg, almonds, onion and pepper in large bowl.
- Shape into 4 patties.
- Coat with remaining crumbs.
- Cook croquettes in oil in medium skillet over medium heat until browned on both sides.
- Serve warm.
