Ingredients

  • 1 (4 ounce) package Starkist sweet and spicy tuna
  • 2 green onions, chopped
  • 1 cup mexican blend shredded cheese (save a little for later)
  • 12 cup green bell pepper
  • 1 large tortilla, I prefer the whole wheat kind
  • salsa (optional)

Method

  • Mix all ingredients in bowl except tortillia.
  • Spray skillet with non-stick spray.
  • Place tortilla in skillet, sprinkle one half with left over chese.
  • Spoon mixture on top of cheese and before folding tortilla in half (moon shape) add the rest of cheese on top (the cheese acts as a glue for the quesadilia).
  • Grill/warm for 5 minutes and flip.
  • Enjoy and dip in salsa!
