Ingredients

  • 1 (8 oz.) can tuna
  • 1 c. cooked rice (1/4 c. raw)
  • minced onion
  • 1 1/2 c. grated Cheddar cheese (1/2 c. for top)
  • salt
  • 1 c. milk
  • 1/2 c. bread crumbs
  • 1 Tbsp. butter
  • 2 eggs
  • juice of 1/2 lemon

Method

  • Combine tuna, cooked rice and 1 to 2 tablespoons minced onion. Heat milk; add bread crumbs, then cool slightly.
  • Add beaten egg yolks.
  • Beat egg whites until stiff.
  • Add crumb mixture to tuna mixture and mix, then fold in egg whites and 1 cup cheese.
  • Pour mixture into a 9 x 13-inch baking dish and top with remaining cheese.
  • Bake at 350° for 1 hour or until center rises and knife comes out clean.
