Ingredients
- 1 (8 oz.) can tuna
- 1 c. cooked rice (1/4 c. raw)
- minced onion
- 1 1/2 c. grated Cheddar cheese (1/2 c. for top)
- salt
- 1 c. milk
- 1/2 c. bread crumbs
- 1 Tbsp. butter
- 2 eggs
- juice of 1/2 lemon
Method
- Combine tuna, cooked rice and 1 to 2 tablespoons minced onion. Heat milk; add bread crumbs, then cool slightly.
- Add beaten egg yolks.
- Beat egg whites until stiff.
- Add crumb mixture to tuna mixture and mix, then fold in egg whites and 1 cup cheese.
- Pour mixture into a 9 x 13-inch baking dish and top with remaining cheese.
- Bake at 350° for 1 hour or until center rises and knife comes out clean.
