- 1.5 lbs med shrimp, shelled and cleaned
- 2/3 c fresh OJ
- 1/4 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 1/4 cup unsweetened pineapple juice
- 1 diced mango
- 1 cup diced jimaca
- 1/2 small red onion, minced
- 1/2 cup chopped fresh cilantro
- 1 jalapeno chili, seeded, minced
- 2 avocado peeled and diced
- 1 granny smith apple, cubed
- salt and pepper
- 2 Tbspn EVOO
Method
- 1. Cook shrimp in boiling water for 2 minutes
- 2. Drain and transfer to cold bowl of ice. Let stand until cold.
- 3. Cut shrimp into half inch pieces. Put in bowl and stir in fruit juices. Cover and refrigerate at least 30 minutes
- 4. a half hr before serving stir in everything else and mix and refrigerate for another 30 minutes. Serve!
