Ingredients

  • 1.5 lbs med shrimp, shelled and cleaned
  • 2/3 c fresh OJ
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1/4 cup unsweetened pineapple juice
  • 1 diced mango
  • 1 cup diced jimaca
  • 1/2 small red onion, minced
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeno chili, seeded, minced
  • 2 avocado peeled and diced
  • 1 granny smith apple, cubed
  • salt and pepper
  • 2 Tbspn EVOO

Method

  • 1. Cook shrimp in boiling water for 2 minutes
  • 2. Drain and transfer to cold bowl of ice. Let stand until cold.
  • 3. Cut shrimp into half inch pieces. Put in bowl and stir in fruit juices. Cover and refrigerate at least 30 minutes
  • 4. a half hr before serving stir in everything else and mix and refrigerate for another 30 minutes. Serve!
